From Carnes Frescas we launched a challenge for all colleagues, …. a contest with the best lamb recipe, of course, should be the star product of the dish.
The pity is not to be able to smell the aroma of their dishes, as we would have liked to share them with them, but from tomorrow Tuesday will be open to vote for the recipe that you liked the most.
The result is that we have many chefs among us, and here you can see the recipes that have sent us….
LAMB RECIPE 1
LAMB SHOULDER WITH POTATOES

Ingredients: lamb shoulder, 4 medium-sized legs, 1 medium-sized onion, 1 small red bell pepper, a pinch of thyme, a pinch of white pepper, sweet paprika, salt and oil, white wine.
Preparation: heat the oven to 190 º, put the shoulders in the tray, peel the potatoes, wash them and cut them into medium pieces, clean the onion and bell pepper, and cut them into medium pieces, put them with the shoulders in the tray and then add the thyme, pepper, salt and olive oil (if possible Artana), wine and finally the paprika.
RECIPE LAMB 2
LAMB SHOULDER

Recipe:
-1kg of lamb garreta in cubes.
-4 cloves of garlic.
-1 onion.
-1 tomato.
-1 bay leaf.
-1 glass of brandy.
– Saffron, oil and salt.
– 3 cut potatoes.
Preparation: In a pot or earthenware casserole (I did not have one), fry the garlic, onion and tomato. Then add the lamb cut into pieces. Then add the saffron, the bay leaf, the brandy, and little by little, the water (about a big glass) and stir frequently. Finally serve.
LAMB RECIPE 3
LAMB STEW

Ingredients:
1kg lamb meat.
1 onion.
2 cloves of garlic.
1 red bell pepper.
3 carrots.
3 large potatoes.
1 cup of red wine.
Crushed tomato (one large can).
Salt and pepper.
Oil.
Ground cumin.
Sweet paprika.
Oregano.
Mushrooms.
Peas.
Preparation:
We will salt and pepper the meat and bathe it in oil. Add a couple of teaspoons of powdered oregano and one teaspoon of sweet paprika. Let it rest.
Heat a little oil in a frying pan to sauté the onion and garlic. Then we will incorporate it to the lamb, we will add the bell pepper, carrot, peas and mushrooms (these I have fried them before). After 5 minutes add the crushed tomato, mix well and add half a teaspoon of ground cumin and the wine. We will let it cook covered for 50 minutes.
I have added the potato after 25 minutes of cooking.
LAMB RECIPE 4
LAMB NECK STEW

Lamb neck stew
10 pieces of neck
4 potatoes
Red bell pepper
2 carrots
A handful of garrofones
2 artichokes
Onion
Red pepper
A glass of brandy or white wine
For the picada, two cloves of garlic, hazelnuts, walnuts, almonds and parsley.
LAMB RECIPE 5
LAMB CHOPS GLAZED WITH HONEY AND RED WINE.

INGREDIENTS:
1Kg Of lamb chops, 60gr honey, 60ml red wine, Rosemary, Ginger,20ml soy sauce, 1 potato, 1 capsicum, wild asparagus.
Oil, pepper and (salt flakes – optional).
Preparation:
1.Take the chops out half an hour before cooking.
2.THE GLAZE.
Grate a piece of ginger with a little oil over low heat.
3. After a minute without browning, turn up the heat and add the red wine.
4. 2-3 minutes for the alcohol to evaporate, lower the heat and add the honey, soy sauce and rosemary for 10 minutes of cooking time.
5. In a frying pan over high heat with oil, cook the chops with salt and pepper.
Pour the glaze on top with low heat, moving them so that they are well pringuen 5 minutes.
7.THE GARNISH
-A boiled potato
-Wild asparagus
-Green bell pepper
*The asparagus and the bell pepper are cooked in a pan, a little oil and salt and ready to eat😋.
